I am always looking for fresh ways to prepare my main dishes and sides to keep dinner from getting boring. Potatoes are one of those staples that can get a little stale but by adding in herbs and a tasty mustard made them one of our favorite side dishes.

I used to think yellow mustard was mustard, and then I got to experience a taste of what yellow mustard could and should be. Colman’s Original English Mustard is anything but boring. It brings a bright tang to your sandwich or recipes like these Mustard & Rosemary Potatoes.

Mustard & Rosemary Roasted Potatoes

Ingredients:

1 1/2 lbs. red potatoes

1 T. Colman’s Mustard

2 tsp. olive oil

2-3 tsp. dried Rosemary

1 tsp. garlic salt

1 tsp. ground black pepper

Preheat oven to 400°.

Quarter red potatoes, unless they are large then cut them into 1/8’s. I find that the small red potatoes really have a lot more flavor.

Combine red potato pieces, olive oil, Colman’s Mustard, pepper, garlic salt, and rosemary in a large bowl until evenly coated. With this delicious mustard I really think more is more so I put all 3 teaspoons on mine, add yours to taste.

Flip potatoes out onto baking sheet and spread them out in a single layer.

Roast in the oven for 45 minutes, be sure to flip them at least once during roasting time to cook them evenly.

Remove from oven, top with a fresh sprinkling of Rosemary if desired.

These potatoes are delicious served alongside just about anything, from barbecue ribs to meatloaf or roast chicken!
