These Quinoa Pancakes are not only healthy but so delicious for breakfast or even a breakfast for dinner option! Plus, they’re pretty darn easy to make because they only require a couple ingredients. I hope you give them a try!
How to Make Quinoa Pancakes
- 1 Cup Cooked Quinoa
- 3/4 Cup Flour
- 2 Teaspoons Baking Powder
- Pinch of Salt
- 1 Teaspoon Vanilla
- 2 Tablespoons Sugar
- 2 Eggs
- 1/2 Cup Milk
- Maple Syrup
- Fresh Fruit (optional)
Step 1 – Whisk together Quinoa, Flour, baking powder, sugar, and salt.
Step 2 – Mix together the egg, milk, vanilla until smooth.
Step 3 – Add the egg mixture to the flour mixture and combine well
Step 4 – In a pan coated with nonstick spray drop 1/4 cup batter.
Step 5 – Cook until bubbles appear on top and flip to cook the other side.
Yum! They were so easy to make but even easier to eat! This recipe made six large pancakes and I may have had them all for lunch.
