20 Days of Christmas Cookie Treats Day 13 Mint Chocolate Chip Cookies
Today I am excited to share a guest post with you from Pamela over at Pamela’s Heavenly Treats.  She has some inspiring healthy treats that she shares over on her blog!  Today she is sharing a recipe for Mint Chocolate Chip Cookies with us.  Please be sure to stop by and check out all her other recipes!

Hello there! Thank you, Chrissy for having me share a post today on your awesome blog!  I am Pamela the lovely behind Pamela’s Heavenly Treats. I love sharing healthy and yummy desserts, mainly cupcakes and cookies! 

  Christmas is my favorite holiday, it’s the giving holiday, and its the busiest holiday for me.  I am in the kitchen everyday making cookies for neighbors, friends, school, teachers, Hospice the list goes on, but I love it!  By the end of the day I am TIRED, covered in flour (I am a messy baker), but have some yummy cookies to share.

Each year I like to add about 6 or more new cookies to my list, this is one of the new cookies!  I took these cookies to our homeschool coop Christmas party, and they went like hot cakes!

Mint Chocolate Chip Cookies, when you bite into these, you taste the peppermint and the chocolate, what a yummy pair!  I made them green for the holiday!
Cookies
2 cups whole wheat flour
1 tsp baking soda
1/2 tsp salt
1 cup light brown sugar
1 cup unsalted butter (softened)
1 tsp vanilla
1 egg

1 1/2 cups chocolate chips2 tsp peppermint extractgreen food coloring (optional)


Directions

Heat oven to 350.  In bowl mix flour, baking soda, salt, hot chocolate mix and chocolate chips together, set aside.  Mix light brown sugar, butter, vanilla, pepper extract and egg.  Then slowly add your dry ingredient, mix well!  Stir in green food coloring (optional).  Use a small scooper and drop dough on baking sheet.  Bake for 10 minutes, cool on wire rack.

    Pamela you know I am a HUGE fan of you and your yummy recipes. This one though (don’t kill me) has left me feeling a little green! Very green actually…..hmmmm

    I see that you mix hot chocolate mix into the bowl with flour, baking soda, etc, but do not see how much we need in the ingredient list. Thanks! Looking forward to adding these to my holiday boxes.
