20 Days of Christmas Cookie/Treats. Day 5: Homemade Caramels

Day 5 of our 20 Days of Christmas is a recipe that I made this week.  Caramels are my very favorite, I would pick Caramel over Chocolate any day of the week.  I have never made homemade caramels and decided this year it was time to try.  They were really easy to make but took some time to package them all up.  🙂

These Caramels would make a yummy little neighbor, teacher, or friend gift.  Or would be really cute adding to your cookie trays at Christmas.

Homemade Caramels

Ingredients

  • 2 cups white sugar
  • 1 1/2 cups corn syrup
  • 2 cups heavy cream
  • 1 cup butter
  • 1 teaspoon vanilla extract

Instructions

  1. Butter a 9×13 inch dish.
  2. In a heavy saucepan, combine sugar, corn syrup, 1 cup cream and butter. Bring to a boil, stirring often, then stir in remaining 1 cup cream. Heat, without stirring, to 242 degrees F (116 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Remove from heat, stir in vanilla, and pour into prepared dish. Refrigerate.
  3. When cool, return candies to room temperature then cut into 1 inch squares and wrap in waxed paper.

    what did you use for wrappers? I noticed it is not waxed paper , and looks great!

      I just cut up cellophane and used it. I happened to have a roll on hand and wanted to use what I had. 🙂
