Cinnamon Sugar Applesauce Muffins

I had the most amazing time recently watching my adorable niece and nephew for a week!  First, let me tell you that I am SO out of shape for all the work that goes in to babies, these cuties are 20 months and 8 months (around there) and they are EASY babies.  Still, I managed to be exhausted the entire time!  Yep, they went to bet at 6 pm and I was right behind them – no joke!

The cool thing besides all the snuggles, play time and getting to know them, I was able to make little toddler recipes for them.  Recipes like these Mini Applesauce Muffins that my niece INHALED.  How can you really go wrong with muffins covered in butter and sugar?  Not very healthy but supper delicious!  I had so much fun treating them to these recipes AND of course they had to be easy to make because I was limited on time and hands!  Check out the recipe!

How to Make Cinnamon Sugar Applesauce Muffins

Ingredients You Need

1/2 Cup Butter, softened

1/2 Cup Sugar

2 Eggs

3/4 Cup Applesauce

1 3/4 Cup Flour

1 Teaspoon Baking Soda

1/2 Teaspoon Salt

1/2 Teaspoon Vanilla

1/2 Teaspoon Cinnamon

Ingredients for Topping

1/2 Cup Melted Butter

1/2 Cup Sugar

1 Tablespoon Cinnamon

Instructions

Step 1 – Cream together the butter and sugar until smooth

Step 2 – Add the eggs, vanilla and applesauce to the butter mixture and combine well

Step 3 – Mix the flour, salt and cinnamon together in a separate bowl and add slowly to the butter mixture

Step 4 – Scoop into a greased mini muffin tin and back at 350 degrees for 15 minutes

Step 5 – After the muffins have cooled, dip in the butter then the sugar mixed with cinnamon to coat well.  Enjoy!

 Aren’t these the cutest little muffins?  They fit perfectly in little hands too.  I did let my older boys try them and they were hooked as well, so I think they’re a great recipe for anyone at any age!

    These mini muffins turned out so yummy. Instead of regular sugar I used Stevia. Except for the topping I used the regular sugar for that. Thank you so much for this recipe. Can’t wait to try others. For some reason it won’t let me rate it, but I give it 5 stars.

    I made these for my kiddos today and they are delicious! To cut back on the fat in the muffins, I reduced the butter to 1/4 cup and increased the amount of applesauce to 1 cup. They were still moist and very tasty! I also reduced the baking time by a couple of minutes. Thanks for the great recipe.

    Hi Chrissy, my daughter and I made this recipe yesterday. We like them very much – they are a bit dry as another reader commented, however we added little dabs of homemade cream cheese frosting on top instead of the butter/sugar and cinnamon mixture and that really helps add some moisture. I added 1 t. of cinnamon to the batter. Thank you for a nice recipe 🙂

    Hi,

    I baked the mini applesauce muffins last night with my nine year old daughter. The muffins have good flavor and perfect for back to school breakfast. I will say the muffins are a little dry, but I think next time I will not bake as long. I hope my comment is helpful. Thanks for the recipe.

    I just made these and they are lovely. I’m glad I saw the other notes about the Baking Soda so I didn’t leave it out. I did find that I needed much less than the 1/2 cup of butter (1 stick) called for in the recipe for the last stage. In fact, I used less than 1/2 stick (1/4 cup) of melted butter for the last stage and even had a little left over. I also didn’t use all of the cinnamon sugar either.

    The first ingredient list calls for baking soda but it’s not in the instructions. Its not listed at all in the printable version. Can you confirm whether or not the baking soda is supposed to be used??

    Made the muffins and when they were in the oven I realized I hadn’t added baking soda. Does this need to go I to the flour mixture?

      Yes, it should go in the flour. If you omit the baking soda the muffins will be fine, just a little heavier.

    I left out the baking soda bc it was left out of step 3. Oops. Too bad I didn’t think about until I was scooping into the muffin tin. I’ll try it again the correct way next time. Thanks for breakfast!

    These are good but I unfortunately followed the printable instructions and the baking soda ingredient wasn’t listed there 🙂 Nonetheless, I’ll make them again with the baking soda! Thanks for the recipe!
