Ingredients
- 1 Bag Washed Arugula
- 1 Package Couscous
- 1/2 Cup Dried Cranberries
- 1/2 Cup Toasted Almonds, slivered
- 1 Cup Shredded Cheese
- 1 Bag Roasted Corn, Thawed
- 1/2 Cup Dressing – I used a Juniper Berry Balsamic Vinegar mixed with Blood Orange Oil

- Instructions
- Step 1 – Make the Couscous according to the package instructions
- Step 2 – Mix all the ingredients together except the arugula
- Step 3 – Add the arugula to the salad right before serving and enjoy!
