Beef and Mushroom Slow Cooker Stew



  • 6 Cups Beef Broth
  • 2 Pounds Beef Stew Meat
  • 1 Carton Mushrooms, diced or sliced
  • 2 Cups Carrots, shredded
  • 1 yellow Onion, diced
  • 1 TBSP Garlic, Minced
  • 1 tsp Parsley
  • Green Pepper, diced (optional)
  • Celery, diced (optional)
  • Salt
  • Pepper


  1. Instructions
  2. Place all the ingredients together in a 6 Quart Slow Cooker and cook on low for 6-8 hours. This is really hot when it’s done so I like to turn it to warm for about a half hour and let it cool slightly.
  3. If you’re not eating clean or on a low carb diet, you can add potatoes to this recipe as well.
