Birthday Cake Pancake Recipe with Nectresse Sweetener

Do you LOVE sugar in your coffee and recipes?  I sometimes think that I put more sugar in my coffee than actual coffee.  The sweeter the better!  So, when I found out about this new sweetener, I wanted to try it out and see how it compared in my coffee and recipes.  NECTRESSE™Sweetener is a new 100 percent natural sweetener with zero calories!

From the makers of Splenda sweeteners, this new product derives it’s sweetness for a the natural monk fruit, a small green melon. 
I tried out the new NECTRESSE™Sweetener in my coffee and found it to have a much more sugary taste compared to other artificial sweeteners that I have used.  It also had more of the same consistancy as sugar, it was grainy instead of powdery. 
I decided to give it a try in some special Birthday Cake Pancakes that I made on the morning of my sons birthday and noone knew the difference!

Here is my recipe!
Ingredients:
1 1/2 cups flour
2/3 cup yellow cake mix
1 Tbls Nectresse ( I used 3 packages)
3/4 tsp baking powder
1/2 tsp salt
2 eggs
1 tsp vanilla
1 1/2 cups milk
3 Tbls sprinkles
Directions:
Mix everything together  and pour half cup on a hot griddle.  When finished cooking, top with whip cream and sprinkles ( you could easily make a homemade whip cream with the Nectresse as well!)
