Chocolate Cake Mix Cookies {3 Ways}

We’ve already shared four delicious recipes with you so be sure to check them out at the bottom of this post!  Today I have Chocolate Cake Mix Cookies that are made three different ways with one cake mix.  This is so handy, make one batch of cookies and frosting but end up with three amazing cookie options!  Check out how I made these below!

How to Make Chocolate Cake Mix Cookies

Ingredients You Need

  • 1 Chocolate Cake Box Mix (I used a Triple Chocolate)
  • 2 Eggs
  •  1/3 Cup Oil

Instructions for making the cookies

Step 1 – In a stand mixer, mix together all the ingredients

Step 2 – Shape the cookie dough into 1 inch balls and place on a pan that’s greased over covered with Silpat

Step 3 – Flatten the cookies with the bottom of a glass

Step 4 – Bake at 350 degrees for 8 minutes

How to Make Almond Buttercream Frosting

Ingredients You Need

  • 8 ounces of Cream Cheese (softened)
  • 1/2 Cup Butter (softened)
  • 1 Teaspoon Rodelle Almond Extract
  • 3 Cups Powdered Sugar

Instructions

Using a mixer, whip all the ingredients together until they’re smooth

For the Chocolate Sandwich Cookies, I simply added a layer of frosting to bottom of one cookie and topped it with a second cookie.  Then I rolled them in sprinkles!

The Chocolate Cake Mix Cookies with Almond Buttercream on top are delicious too!  These are simply frosted with the Almond frosting then topped with sprinkles.  Easy Peasy!

The final version is just as simple as the others, after you make your 1 inch cookie dough ball simply roll it in sprinkles before you flatten and bake it.  The sprinkles are baked into the cookie then.  If you want to get extra fancy, you could top these with frosting too!  I mean, you can NEVER go wrong with more Almond Buttercream frosting on anything!

These are all so easy to make, you could even get the kids involved with this recipe!
