Christmas Treat: Chocolate Lollipops

Chocolate lollipops are a simple and fun treat, they are great to pass out at a class Christmas party, to neighbors, friends, or even a sweet snack at the office party.  They are pretty simple to make too and can be flavored and decorated in a variety of ways.  While melting and molding chocolate may seem intimidating it is easy to do keeping a few things in mind.  Add peppermint extract to your green chocolate, cinnamon extract  to red, or almond extract to plain brown chocolate to create delicious flavor combinations.

How to make Chocolate Lollipops

Supplies Needed:

1 lb. Candy Melts

Star Lollipop Mold

Lollipop sticks

Optional Supplies You Need

Chocolate bottle

Cellophane bags for packaging

Instructions for make Chocolate Lollipops

Step 1 – Place a pinch of glittery sprinkles inside each mold to dress up your pops then lay lollipop stick in it’s designated spot so that it is halfway inside shaped mold to give a secure handle.

Step 2 – Divide chocolate 4 ways ( each batch will make about 5 lollipops if you are using the star mold like I did) Don’t worry if you make to much you can reheat it with the next batch just fine.

Step 3 – Place one batch of chocolate in a microwave safe dish and heat in 20 second increments, stirring each time, until melted fully.

If you want to add flavoring to your chocolate you can stir it in quickly at this time, ⅛ th to ¼” teaspoon of extract per batch is  plenty.

Step 4 – Fill molds by scooping chocolate inside with a small rubber spatula, press chocolate into all corners and fill mold completely.  Scrape excess off top with flat side of spatula.

Step 5 – Tap mold gently on the  counter a few times to release any air bubbles.

To make it even easier you can melt your chocolate right inside this bottle and use it to fill molds.

Step 6 – Place mold in the refrigerator for 1-15 minutes to allow chocolate to set.

Step 7 – Remove pops gently from mold by twisting slightly and pressing from the bottom up.

Step 8 – Place lollipops in cellophane bags to gift.

Tips to Remember:

Be careful to not overheat your chocolate or it will seize up and no longer be usable. Heating 30 seconds or less at a time and stirring will help with this.

Keep chocolate away from water, be sure to dry all bowls and utensils thoroughly before use.

Recipe makes 20 lollipops
