With my boys being back in school, I’ve been reminded how difficult it can be to get everyone up in the morning, ready for school and fed before they leave the house. There are days when I struggle to get a bowl of cereal in front of them, let alone something more substantial, but I decided this was going to be my year!
This year I’m taking charge of the breakfast chaos and planning ahead so I have easy school day breakfast ideas ready to make in minutes. Not only will these breakfast ideas make my life easier, but they make my kids incredibly happy! Check out these seven ideas that are my kids’ favorites!
When it comes to breakfast, my oldest guy is all about the protein – he loves his eggs, sausage and bacon but I just don’t have the time to make him a breakfast with everything his heart desires.
You would not believe how excited he was about this first breakfast idea when we came across it!
Egg, Sausage, Bacon & Cheese Burrito from El Monterey with a side of Fruit and Orange Juice.
All of my sons’ favorites in a convenient and quick-to-make burrito. I saw these in the store and immediately heard “Hallelujah” playing in the background.
Ok, that may be a little dramatic but I did buy three bags that day. No joke! To be honest, I’ve been known to grab one of these for lunch or dinner on the go. I love that El Monterey products are made with ingredients like cheddar cheese, real scrambled eggs and fresh-baked tortillas.
Blueberry Quinoa Pancakes with a Glass of Milk
Who doesn’t love pancakes? We’ve made a delicious Blueberry Quinoa Pancake that is loaded with extra protein to get kids out the door fully fueled and ready to learn each day.
My boys “thought” they wouldn’t like these because there was something weird in them called quinoa – but they never missed a beat when it came time to eat them!
Avocado Eggs with Fruit and Orange Juice
This dish was really fun to make and eat! To make the eggs, you simply cut an avocado in half and break an egg into the middle of each half.
Bake the avocado at 350 degrees for 15-20 minutes or until the egg is done to your liking. My boys like their eggs over hard without any hint of runny centers, but I think this dish is great with a side of toast to dip in your egg.
Either way, it’s a great breakfast option for anyone!
Yogurt, Fruit & Granola Parfait
One of my very favorite breakfasts is a Fruit & Yogurt Parfait that’s topped with a crunchy granola. My kids like it too because they can pick what fruit and how much they want to add, as well as the amount of granola they put on top.
Parfait bars are a great idea in the mornings – set out all the fixing options and let your family make their own.
Mini Applesauce Muffins with Fruit & Milk
These little guys are not just a great breakfast but a handy snack too. I remember the first time I made them for my niece and nephew, they inhaled them! Now I make them regularly to have on hand alongside a bowl of fruit in the morning for breakfast. You can find the recipe to make them yourself HERE.
Protein Smoothie for Kids
Smoothies are another great breakfast option. My youngest guy isn’t a big breakfast eater in the mornings but he’ll go for a smoothie no matter what.
His favorite is a banana & peanut butter smoothie that’s full of protein. I personally like to have a Breakfast Burrito along with this – they go really well together in my mind!
Strawberry Muffins & Milk
Don’t get me wrong, I love a good Blueberry Muffin too but there’s something about these Strawberry Muffins that my family just loves. I like to serve them with either scrambled eggs, a Breakfast Burrito or a just a big glass of milk. They’re delicious with Strawberry Butter on them too!
