My boys are both elementary aged and love taking their lunch to school. They quickly grow tired of the choices the school has to offer and then of the cold lunch options that I send with them. So within a couple weeks of school starting, I have to start getting creative and finding unique and fun lunch options to stick in their lunch box.
I am always looking for healthy options that I can make in a way that my boys will think is fun and will want to eat. This is not always an easy task with my kids.
On a recent shopping trip to Target, we found these Rubbermaid LunchBlox Lunch Kits in the back to school section. I thought they would be perfect for getting in different proportion sized items for my kids by using the four different sized containers. This is a great way to get a balance of healthy options in your kids lunch box.
My boys like options with their school lunch. They want a little bit of a lot of different things and I get so tired of buying those disposable sandwich bags for them to use 8 of every day for their lunch. I had been looking for a reusable option with containers that were not huge. The Rubbermaid LunchBlox are the perfect size for them and contains a Ice Pack to keep the lunch cold.
All of these pieces click together very easily to keep the lunch in one place.
The containers are BPA free as well as dishwasher safe. So, when my boys get home from school, I can pop them in the dishwasher and have them ready to go for the next morning.
After we picked up the new lunch box for my boys, we decided to put it to work and make a new lunch recipe for them to take. They LOVE Peanut Butter and jelly sandwiches but grow tired of them quickly so we have tried making wraps, crepes, fruit with peanut butter and many more ideas. Today we made a Peanut Butter and Jelly Waffle sandwich. They loved it! The crunchy waffle paired with the peanut butter and jelly made the perfect lunch sandwich.
This sandwich is very easy to make! All you need are a few simple ingredients and you have a healthier lunch option for your kids lunch box.

Step 1 – Toast two waffles in the toaster
Step 2 – Spread your peanut butter and jelly all over one of the waffles
Step 3 – Add the second waffle to the top and make the sandwich. Enjoy!
