Ingredients
- 4 Chicken Breasts
- 2 Tablespoons Mazola Cooking Oil
- Seasoning Salt
- Salsa Ingredients
- 2 Cucumbers, chopped
- 2 Medium Tomatoes, chopped
- 1 Yellow Pepper, chopped
- 1/2 Red Onion, chopped
- 2 Teaspoons Fresh Cilantro, minced
- 1/2 Teaspoon Salt
- 1 Teaspoon Garlic Salt
- 1 Tablespoon Lime Juice
Instructions
- Step 1 – Pour the Mazola Cooking Oil in a pan and heat
- Step 2 – Add the chicken breasts to the oil and brown on both sides, place in the oven and bake for 20 minutes (I use a metal pan so I can just stick the pan in the oven)
- Step 3 – Mix all the vegetables together in a medium dish and place in the refrigerator for an hour (do this ahead of time so you can place on the chicken when it’s finished or I have been impatient and pulled it out after 20 minutes and used it)
- Step 4 – After the chicken is fully cooked, take out of the oven and place on a plate topping with the Cucumber Salsa. Enjoy!
