Healthy Recipe: Baked Chicken with Cucumber Salsa



  • 4 Chicken Breasts
  • 2 Tablespoons Mazola Cooking Oil
  • Seasoning Salt
  • Salsa Ingredients
  • 2 Cucumbers, chopped
  • 2 Medium Tomatoes, chopped
  • 1 Yellow Pepper, chopped
  • 1/2 Red Onion, chopped
  • 2 Teaspoons Fresh Cilantro, minced
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Garlic Salt
  • 1 Tablespoon Lime Juice


  1. Step 1 – Pour the Mazola Cooking Oil in a pan and heat
  2. Step 2 – Add the chicken breasts to the oil and brown on both sides, place in the oven and bake for 20 minutes (I use a metal pan so I can just stick the pan in the oven)
  3. Step 3 – Mix all the vegetables together in a medium dish and place in the refrigerator for an hour (do this ahead of time so you can place on the chicken when it’s finished or I have been impatient and pulled it out after 20 minutes and used it)
  4. Step 4 – After the chicken is fully cooked, take out of the oven and place on a plate topping with the Cucumber Salsa. Enjoy!
