Homemade Peanut Butter Cookies

Ingredients

  • 1 cup butter, softened to room temperature
  • 1 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs, room temperature preferred
  • 2 teaspoons vanilla extract
  • 1 cup creamy peanut butter
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup granulated sugar, for rolling (optional)

  2. Step 1 – In a stand mixer, cream the butter and sugars together on medium speed until it’s smooth.
  3. Step 2 – Add the egg and mix on until well combined
  4. Step 3 – Add the vanilla and peanut butter and mix on high until combined
  5. Step 4 – In a separate bowl, mix the flour, baking soda, baking powder and salt together
  6. Step 5 – Add the flour mixture to the wet ingredients and mix on low until combined
  7. Step 6 – Refrigerate for 4 hours
  8. Step 7- Preheat the oven to 350 degrees and line to baking sheet with a silicone baking mat
  9. Step 8 – Roll the balls (I use a small cookie scoop to make the 1 inch cookies) of dough into granulated sugar and place on the baking sheet
  10. Step 9 – Press a fork into the tops to create the criss-cross pattern. Bake for 10 minutes or until they are slightly browned on the edges. Remove from oven and let them cool on the sheet for 5 minutes. Enjoy!
