Mandarin Orange Creamsicle Cheesecake #SmartSnack

July 31, 2012   |   8 Comments

Del Monte Fruit Cups, Cheese cake, Mandarin Orange
School is just around the corner for so many kids!  For us, there is so much preparation that goes into the boys back to school.  Things like new clothes, school supplies, organizing schedules, lunch menus and snack schedules.  My boys take their lunch to school for the most part and I have a Home Lunch Menu just like the schools have a lunch menu.  It really helps to keep us organized and know what is for lunch each day.

Recently, I purchased a bunch of Del Monte fruit cups for my kids lunches from Walmart.  They LOVE the fruit cups, diced peaches and diced pears and I love that they are a healthy option for their lunch and snacks.  You can see my shop over HERE.

You know that I love to make new recipes!  I decided I would create a new fun after school treat for one of the first days of school for my boys.

This is a no-bake cheese cake so it is really easy and pretty quick to make!

Ingredients:
Graham cracker crust {I used the individual size}
1 package Cream Cheese at room temp
1 container whip cream
1/4 cup of Mandarin fruit juice from the fruit cups
1 tsp Vanilla
3/4 cup sugar

Directions
Mix the cream cheese, sugar, Mandarin fruit juice and vanilla together until completely smooth.  Fold in the whip cream gently.  Scoop some of the cream cheese mixture into each Graham cracker crust and top with whip cream.  Garnish with Mandarin Orange.

After making this, place it in the refrigerator until cold.  It really has that yummy creamsicle taste to it!

I also made some yummy little ice cubes with the Del Monte Fruit Cups to use in our punch and juices.

This was very easy, I just put a spoonful of the fruit into my star ice cube tray.  Then just slipped them int he freezer for an hour.
 They pop out really easy!
Then we just stuck a couple into our fruit punch.  My little guy that these were so cool and tasted yummy!

These are just a couple of the new recipes and ideas that I came up with for my boys as they head back to school.
