Oatmeal Breakfast Cookies Recipe

Cookies for Breakfast?  Yes, Please!  How can you go wrong with a breakfast like that?  These little Oatmeal breakfast cookies are full of oatmeal, apple and cinnamon so they really pack some great flavor.  Plus, they’re sweetened with maple syrup  so they are a little bit healthier cookie option for a snack too!

You could also add walnuts to add some protein into the cookies.  We loved them!  My boys ended up taking them as snacks to school all week!  They were the perfect little snack that really filled them up!

How to Make Oatmeal Breakfast Cookies

INGREDIENTS:

  • 1 cup unsweetened applesauce
  • 1/3 cup Oil
  • 1/3 cup Maple Syrup
  • 1 Apple, peeled and grated
  • 1 cup old fashioned oats
  • 3/4 cup Flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt

DIRECTIONS:

Step 1 – Preheat the oven to 350 degrees and grease cookie sheets

Step 2 – In a bowl, mix together the applesauce, oil, maple syrup and apple

Step 3 – In a second bowl, stir together the oats, flour, baking powder, cinnamon and salt. Add the dry ingredients to the wet ingredients and combine well

Step 4 – Place 1 Tablespoon scoops on the cookie sheet 2 inches apart and bake for 10 minutes or until lightly golden.

What do you think?  Time for cookies for breakfast?  I personally would love to have chocolate chips in my cookies, but it felt wrong adding them to a cookie that we were having for breakfast!
