This week I started a Pantry Challenge after my friend, Ashley, over at Crunchy Frugalista put the challenge up herself and asked for others to join her. I thought it was a fabulous way to start cleaning out our pantry, eating food that we already have and saving money at the same time.
The challenge is, use what you have and only spend $50 a week on groceries.
I was excited to use what I had on hand in my freezer and pantry to either create new meals or make meals that we hadn’t had in a while. I was hopeful that would be a good thing, and we wouldn’t be eating Tuna for every meal.
I planned out our menu after I went through the cabinets and made my grocery list before I headed to Cub Food to spend as little as possible. I ended up spending $40.02 and left the store with a cartful of groceries!
Here was my first weeks pantry challenge menu plan.
Lunch: Egg Sandwiches and fruit
Supper: Fish, corn and fruit
Lunch: Mac & Cheese
Lunch: Ham and Cheese
Supper: Grilled Cheese and Soup
Lunch: Crackers, Cheese and Fruit
Supper: Hamburgers and Sweet Corn
Breakfast: Eggs & Toast
Breakfast: French Toast
Lunch: Eat Out
Supper: Chicken and Rice
Brunch: Bacon and Eggs
Supper: Tatertot Casserole
This week has gone well so far, even though I was sick a night, we were still able to eat what we had here in the house.
