Quinoa Stuffed Peppers Recipe

Hello Taylor House readers! I’m so happy to be back with all of you, sharing another great recipe! It’s hard to believe we are already in full holiday mode here at our house!

My name is Krysta and I blog over at KrystaSteen.com! Hope you will stop by and say hi!

Today, I am sharing these awesome Quinoa Stuffed Peppers. I LOVE quinoa and love to try recipes with it as an ingredient. It’s so good!

Quinoa Stuffed PeppersQuinoa Pepper Ingredients

How to Make Quinoa Stuffed Peppers

Ingredients:

6 bell peppers, tops cut off, stemmed and seeded

3 cups cooked quinoa

4 oz. can green chiles

1 cup corn

1/2 cup diced tomatoes

1/2 cup canned black beans, drained and rinsed

3/4 cup favorite cheese (pepperjack, colby jack, white cheddar all be great)

1/4 cup crumbled feta

2-3 Tablespoons fresh cilantro, chopped

1 1/2 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon chili powder

salt and pepper, to taste

Instructions:

Preheat oven to 350 degrees.  Spray a 9X13 pan with cooking spray, or line with parchment paper.  Put bell peppers into pan.

In a large bowl, combine all remaining ingredients.

Spoon filling into each pepper.  Bake (open side up) until peppers are tender and filling is warm throughout, about 30 minutes.

Serve immediately.

Serve 4-6

    I’m currently waiting for these delicious morsels to come out of the oven. I can’t wait to share them with my husband! We’re trying to cut back on meat intake, and look for healthier, fresher foods to fill the void. This was a great find! Although they’re not done yet, I had a little bit of the filling leftover and have been nibbling on that. It’s so flavorful! Thanks for sharing!

    I’ve been trying to make dishes with quinoa at home lately and this is a great idea. I may even throw in my leftover turkey from thanksgiving and create a meal for myself tonight. Thanks for the recipe!
