Simple Sweet Potato Hash with Eggs that’s Healthy too!

Ingredients

  • 2 Sweet Potatoes, diced with skin
  • 1 Red Onion, Diced
  • 1 Green Pepper, Diced
  • 1 Cup Mushrooms, Sliced
  • Olive Oil
  • Salt & Pepper
  • 4 Eggs

Instructions

  1. Preheat the oven to 350. Pour a tablespoon of olive oil into a cast iron skillet and heat over medium heat. Add the onion and garlic, cook, until the onion is translucent. Next, add your sweet potatoes and mix together with the onion and garlic. Let it cook for about 8 minutes without mixing it. Add the green peppers to the sweet potato mixture and mix together. Cook for another 5 minutes. Make four indents in the vegetables to add your eggs. Pop in the oven for about 7 minutes or until the white of the egg is set. Add Salt & Pepper before serving!
