School’s Out for Summer! I’m one of those Mom’s who LOVES having my boys home for summer, my husband says it’s because I like to have all of my people together. It’s true! We can do more together and spend more time as a family.
Every single summer though, we have that first week of euphoric summer happiness where we sleep in and eat whatever but then that second week rolls around and I go into a full blown panic mode. I need to feed these kids ALL summer and there’s not enough food in the state of Iowa to fill them up.
I mean, they are growing boys but who would have thought they could put down three burgers, salad and fruit for supper? Yikes! Plus, on the days that they have swim team or other activities, they come home and dig through the cabinets in search of all of the things they know I bought just a day or so ago.
Here’s what I’ve figured out, I need to have easy snacks on hand and ready to go otherwise they’re going to grab something that’s not healthy and full of empty calories which mean they’ll be hungry again in a matter of minutes!
We’ve partnered with General Mills Cereal to show you three different easy snack ideas using my favorite cereal, Cinnamon Toast Crunch. These are all easy recipes that kids can make too, in fact later this summer my youngest will be making them on an upcoming Facebook Live episode of Kids in the Kitchen. We wanted to give you a sneak peak though, in hopes that you can use them this summer too!

Our first recipe is Caramel Apple Nachos with a Cinnamon Toast Crunch Topping. We make these all the time but use Peanut butter in place of the Caramel but this version is probably my favorite. It’s so easy and delicious! Plus, I know that there are real ingredients in General Mills Cereals like real cinnamon in every piece of Cinnamon Toast Crunch!
Caramel Apple Nachos with a Cinnamon Toast Crunch Topping
Ingredients You Need
- 2 Apples, sliced
- Caramel Sauce (I used Ice cream topping)
- Cinnamon Toast Crunch, crushed slightly
Instructions
Start by slicing your apples and arranging them on a plate. Drizzle your caramel sauce over top and then add the slightly crushed Cinnamon Toast Crunch. Enjoy!
The next recipe we made is a Cinnamon Sugar Trail Mix. This makes a great snack for on the go! We keep a jar of it on the counter at all times for the kids to grab when they need a little snack.
Cinnamon Sugar Trail Mix
Ingredients You Need
- 2 Cups Cinnamon Toast Crunch
- 2 Cups Pretzels
- 1/2 Cup Almonds, I used sliced
- 1/2 Cup Chocolate Chips
- 1/2 Cup M&M’s
Mix all the ingredients together and store in an airtight container.
This is one of those recipes that can easily be changed to add your favorite ingredients into it. My youngest loves raisins in his and dried apple chips are delicious too! The possibilities are endless!
This last recipe is a delicious Cinnamon Baked Oatmeal muffin, these are a great option for breakfast too! There’s a lot of days that my oldest guy grabs one of these on his way out the door to drivers ed (how do I have a boy that’s driving?).
Cinnamon Baked Oatmeal Muffins
Ingredients
- 2 Cups Oatmeal
- 1 Cup Cinnamon Toast Crunch
- 1 Apple, diced
- 2 Eggs
- 1 Cup Milk
- 1 tsp Cinnamon
- 2 TBSP Sugar
- 1 tsp Baking Powder
Start by mixing together all the dry ingredients. Next, mix in the milk, apple, and eggs. Pour the ingredients into a muffin tin and bake for 20 mintues at 350 degrees. This makes about 12 muffins.
I love that General Mills Cereals are a delicious, summertime solution when summer activities heat up!
