Avocado Spinach Quinoa Salad

Avocado Spinach Quinoa Salad is my new go-to lunch option! We’re changing things up a little bit over at The Taylor House, we’ve been eating clean and healthy for the last three weeks.

Ingredients

Uncooked Quinoa Spinach Tomato Cucumbers Lemon juice Extra-virgin olive oil Salt Ground Black Pepper

Instructions

In a medium bowl, rinse the quinoa a few times.

In a medium saucepan, boil 2 cups of salted water.

Add the quinoa and continue to boil until the quinoa is tender.

Drain the quinoa and let it cool.

In a large bowl, combine the spinach, tomatoes, cucumbers, and quinoa after it has cooled.
