This is a great dairy-free, gluten-free, paleo recipe that’s perfect for a clean eating diet!

Instructions

Preheat the oven to 350. Pour a tablespoon of olive oil into a cast iron skillet and heat over medium heat.

Add the onion and garlic, cook, until the onion is translucent.

Next, add your sweet potatoes and mix together with the onion and garlic.

Let it cook for about 8 minutes without mixing it.

Add the green peppers and mushrooms to the sweet potato mixture and mix together.
