Ingredients

2 lb Ground Beef
1 medium Onion diced
2-3 cloves of Garlic minced
3 tablespoon Tomato Paste
1 ½ teaspoon Salt
1 teaspoon Black Pepper
1 tablespoon Italian Seasoning
4 cups Beef Broth
½ cup Greek Yogurt
½ cup Whole Milk
16 oz Pasta
4 cups Cheddar Cheese plus some extra for topping if desired

Instructions

Sauté the onion on medium-high heat until translucent (About 5 minutes).
Add the garlic and sauté until fragrant (About another minute).
Add the tomato paste and mix until well combined.
Add the ground beef and break it apart.
Add the Salt, Black Pepper, and Italian Seasoning. Combine everything in the frying pan.
As the ground beef is cooking, slowly add ½ of the beef broth. Add about ¼ cup at a time, mixing into the ground beef with every addition.
When the ground beef is done cooking, add everything from the frying pan to the crockpot. Then add the remaining beef broth.
Cook on high for 2 to 3 hours. Or on low for 4 to 5 hours.
Add the pasta, milk, and Greek yogurt, and cook for about 30 to 45 more minutes until the pasta is cooked.
Add the cheese and stir until well combined.
Top with more cheese if desired.

Notes

Use freshly shredded cheddar for the creamiest sauce.
Start checking the pasta at about 30 minutes; slow cookers vary.
Stir in a splash of milk or broth when reheating leftovers if they seem dry.
Top with diced pickles, ketchup, mustard, or bacon for extra cheeseburger flavor.
