Step 1 – In a large pot melt 2 Tablespoons butter and add the onions to sauté
Step 2 – Add the quinoa for two minutes into the butter and onion, stirring constantly
Step 3 – Add the Chicken broth and bring to a boil. Cover and let the quinoa cook for 15 minutes
Step 4 – While the Quinoa is cooking add 2 Tablespoons of butter in a pan and add the shrimp, mushrooms, garlic and seasoning salt and cook until the shrimp are fully cooked
Step 5 – Fluff the Quinoa with a fork and pour into a baking dish, add the shrimp on top with the fresh parsley. Eat right away!
