Instant Pot Tomato Basil Soup

Instructions
Turn your Instant Pot to saute and let it heat.
Dice your onion.
Add olive oil, onion and tomato paste to the Instant Pot.
Stir and let cook for a few minutes until onion softens and turns translucent.
Turn off the Instant Pot and add your diced tomatoes (including the juices) and chicken stock.
Add garlic salt, basil, and parsley.
Turn the Instant Pot to soup, and set it for 10 minutes. Be sure the valve is set to closed.
When the timer goes off, let it sit.
After 10 minutes, release the pressure and open the Instant Pot.
Stir in balsamic vinegar and sugar.
Use your immersion blender to puree.
Serve with Parmesan Cheese & a delicious Grilled Cheese Sandwich.
