These Maple Cheesecake Bars feature a buttery graham cracker crust, a smooth maple-infused cheesecake filling, and a maple crumble topping. They are truly the perfect dessert for the fall!
Preheat your oven to 350°F (175°C). Lightly grease or line a 9x9-inch baking pan with parchment paper.
Make the Crust:
In a bowl, stir together graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool slightly.
Prepare the Cheesecake Filling:
In a medium bowl, beat the cream cheese and sugar until smooth. Add the egg, vanilla, maple extract, greek yogurt, and maple syrup, and mix until creamy. Pour the cheesecake mixture evenly over the crust.
Make the Crumble Topping:
In a small bowl, combine flour, brown sugar, melted butter, vanilla, and maple extract. Sprinkle over the top of the cheesecake filling.
Bake for 45–55 minutes, or until the edges are golden and the center is just set.
Cool completely, then chill in the fridge for at least 2 hours before slicing for clean bars.
