These Peach Cobbler Bars capture everything you love about a traditional cobbler: a buttery crust, juicy spiced peach filling, and crumbly topping — but with the convenience of a handheld dessert! They are easy to make and a great way to use your fresh peaches. Enjoy warm, cold, or topped with vanilla ice cream!
Preheat oven to 350°F (175°C). Grease or line a 9x9-inch baking dish (or similar size) with parchment paper.
Make the crust/crumble:
In a large bowl, mix the butter and brown sugar. Mix in vanilla extract. Add flour, baking powder, and cinnamon, and mix until crumbly but holds together when pressed.
Press the crust:
Press about ⅔ of the mixture evenly into the prepared pan to form the crust. Set the remaining ⅓ aside for the topping.
Bake the crust:
Bake the crust for 6-8 minutes, and then set aside.
Prepare the filling:
While the crust is baking, melt the butter in a medium saucepan over medium heat. Add the peaches, sugar, cinnamon, nutmeg, and vanilla. Cook for 3-4 minutes and then remove from the heat. In a small bowl, mix the cornstarch with 1 ½ teaspoon water. Add to the peach mixture and stir well.
Assemble the bars:
Once the peach mixture has cooled slightly, spread it evenly over the crust. Sprinkle the remaining crumble mixture evenly over the top.
Bake for 25–28 minutes.
Cool completely before slicing into bars for neat squares. For a cobbler-style dessert, serve warm with vanilla ice cream.
