Quinoa Mexican Casserole

Quinoa

Can Enchilada Sauce

Frozen Corn

Cup
Black Beans
½
Cup
Diced Tomatoes

Tablespoons
Cilantro

Teaspoon
Chili Powder

Shredded Cheese
Instructions
Directions
Step 1 - Cook your Quinoa according to the instructions
Step 2 - Mix the Quiinoa, Enchilada Sauce, Corn, Beans, Cilantro, Chili Powder and 1 Cup of Shredded Cheese together
Step 3 - Place the mixture in a baking dish and sprinkle with the other ½ cup cheese
Step 4 - Bake for 20 minutes
Step 5 - Sprinkle with diced tomatoes and more cilantro after you remove from the oven. Enjoy!
