This Apple Cinnamon Swirl Loaf is topped with a coffee cake crumble, bringing together the comfort of an apple fritter and a classic coffee cake — all in one easy-to-make loaf. Think tender cinnamon-spiced cake, juicy apple chunks, a brown sugar swirl, and a crunchy streusel topping.
Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or grease well.
Make the apple filling: In a small bowl, toss diced apples with sugar and cinnamon. Set aside.
Make the crumble topping: In another bowl, mix brown sugar, cinnamon, and flour. Add the butter and mix until a crumbly topping forms.
Prepare the batter:
In a large bowl, mix the butter, granulated sugar, and brown sugar. Add the milk, greek yogurt, and vanilla extract. Then, add the eggs one at a time, mixing well after each.
In a separate bowl, whisk together flour, baking powder, and salt.
Add dry ingredients to the wet and mix until just combined.
Assemble the loaf:
Spread half the batter into the prepared loaf pan.
Top with half the apple mixture and half of the cinnamon sugar filling.
Repeat with remaining batter, apples, and cinnamon sugar filling. Top the loaf with the crumble topping.
Bake for 55–65 minutes, or until a toothpick comes out clean from the center.
