Apple Filling:

  • 2 medium apples, peeled and diced
  • ¼ cup light brown sugar
  • 2 teaspoon cinnamon

Batter:

  • ½ cup (1 stick) unsalted butter, melted or browned
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar
  • 2 large eggs
  • ¼ cup Greek yogurt
  • ¼ cup milk
  • 2 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 2 teaspoon baking powder
  • ½ teaspoon salt

Cinnamon Sugar Filling:

  • ½ cup light brown sugar
  • 2 teaspoon cinnamon

Coffee Cake Crumble:

  • ⅓ cup light brown sugar
  • 2 teaspoon cinnamon
  • ½ cup all-purpose flour
  • 3 tablespoon unsalted butter, softened

Instructions:

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or grease well.
  2. Make the apple filling: In a small bowl, toss diced apples with sugar and cinnamon. Set aside.
  3. Make the crumble topping: In another bowl, mix brown sugar, cinnamon, and flour. Add the butter and mix until a crumbly topping forms.
  4. Prepare the batter:
    In a large bowl, mix the butter, granulated sugar, and brown sugar. Add the milk, greek yogurt, and vanilla extract. Then, add the eggs one at a time, mixing well after each.
    In a separate bowl, whisk together flour, baking powder, and salt.
    Add dry ingredients to the wet and mix until just combined.
  5. Assemble the loaf:
    Spread half the batter into the prepared loaf pan.
    Top with half the apple mixture and half of the cinnamon sugar filling.
    Repeat with remaining batter, apples, and cinnamon sugar filling. Top the loaf with the crumble topping.
  6. Bake for 55-65 minutes, or until a toothpick comes out clean from the center.
  7. Cool completely in the pan.
