Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • ½ cup salted butter, melted
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • ¾ cup pumpkin purée (not pumpkin pie filling)
  • ¼ cup greek yogurt
  • 3 medium ripe bananas, mashed
  • 2 teaspoons vanilla extract

Instructions:

Preheat the Oven

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

Mix the Dry Ingredients

In a medium bowl, whisk together flour, baking soda, baking powder, and pumpkin pie spice. Set aside.

Combine the Wet Ingredients

In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Add the eggs, greek yogurt, pumpkin purée, mashed bananas, and vanilla extract. Stir until well combined.

Mix and Bake

Add the dry ingredients to the wet ingredients and stir just until combined - don't overmix.

Pour the batter into the prepared pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out mostly clean.

Cool and Serve

Let the bread cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely. Slice, serve, and enjoy!
