Fish Tacos with Homemade Guacamole

Ingredients

avocados
½
a Roma tomato
1
tablespoon
of chopped red onion
juice of half a lemon
and salt and pepper to taste

Instructions
Dice the half Roma Tomato into small chunks
Remove the skin and the pit from the avocados and mash them up, adding the lemon juice first to keep the avocados from browning. Mix in the diced tomato, red onion and salt and pepper to taste.
Refrigerate for 30 minutes or until chilled.
