Instructions
Preheat your oven to 400°F. Drizzle oil on a large baking sheet and set aside.
Boil the baby potatoes in a pot of boiling water and boil for 15-20 minutes, until the baby potatoes are soft.
Assemble the sheet pan by spreading the chicken thighs, boiled potatoes, and baby broccoli on the sheet pan. Using the bottom of a cup, gently smash each baby potato.
Drizzle olive oil over the chicken, broccoli, and potatoes. Then sprinkle salt, garlic powder, grated parmesan cheese, and Italian seasoning over the chicken, broccoli, and potatoes. Salt and season to your liking!
Bake for 20-25 minutes, until the internal temperature of the chicken reaches 165°F and the broccoli and potatoes are cooked to your liking.
