  • Boneless skinless chicken thighs
  • Baby potatoes, boiled
  • Baby broccoli
  • Olive oil
  • Garlic powder
  • Grated parmesan cheese

Instructions for Garlic Parmesan Chicken Sheet Pan

  1. Preheat your oven to 400°F. Drizzle oil on a large baking sheet and set aside.
  2. Boil the potatoes: Put the baby potatoes in a pot of boiling water and boil for 15-20 minutes, until the baby potatoes are soft.
  3. Assemble the sheet pan: Spread the chicken thighs, boiled potatoes, and baby broccoli on the sheet pan. Using the bottom of a cup, gently smash each potato.
  4. Drizzle olive oil over the chicken, broccoli, and potatoes. Then sprinkle salt, garlic powder, grated parmesan cheese, and Italian seasoning over the chicken, broccoli, and potatoes.
  5. Bake for 20-25 minutes, until the internal temperature of the chicken reaches 165°F and the broccoli is tender.
  6. Optional: Broil for the last 2-3 minutes for a golden, crispy top.
This is the method I use for smashing the potatoes.

  • Using baby broccoli will cook faster than broccoli florets. If you prefer to use broccoli florets, you can cut the broccoli florets into smaller pieces.
