Start by washing and cutting your potatoes into wedge pieces, we like them larger but you can make them small if you prefer. Try to keep the size consistent so they all bake the same. Next, soak the potatoes in warm water for 30 minutes. When you remove them from the water, dry them well and remove as much of the water as you can. Pour 2 tablespoon of the Olive Oil on a baking sheet and the other two in a bowl with the potatoes and mix them to coat them well with the oil. Spread them out on the baking sheet and cover with the seasoning salt and parmesan cheese if you want. Bake them at 400 degrees for 30-40 minutes.
