Homemade Tomato Soup with Pesto
Delicious and easy to make tomato soup with pesto. The ultimate comfort food recipe!

Ingredients

tablespoon
olive oil
1
yellow onion
peeled and diced
2
cloves
garlic
minced
2
15 oz each cans diced tomatoes, undrained
1
cup
chicken broth
¼
teaspoon
kosher salt
pinch
black pepper
¼
cup
half and half
2
tablespoon
basil pesto
Instructions
In a large pot, pour in your olive oil and heat over medium heat.
Add the diced onion and cook until softened and slightly browned.
Add in the garlic and cook for a minute or so
Add the tomatoes, broth, salt and pepper. Stir to combine.
Bring everything to a boil and turn head to low.
Use an immersian blender to blend until smooth.
Stir in the half and half and heat through.
Spoon into bowls and add 1 teaspoon of pesto and half and half to the top of the soup.
