Homemade Tomato Soup with Pesto


Comfort food at its best, this Homemade Tomato Soup is perfect with the added flavor of basil pesto!  Add a side of garlic bread or grilled cheese and you have dinner that your family will love.


One of my favorite meals growing up was Tomato Soup with grilled cheese sandwiches. It was something I looked forward to and has since become a comfort food that I make for my boys as well.

I always loved the traditional tomato soup and I’m pretty sure my Mom just poured it straight out of a can but I think this recipe gives the soup so much more flavor when you add the pesto and cream on top.

How to make Homemade Tomato Soup

Ingredients You Need

  • 1 Tbsp olive oil
  • 1 yellow onion, peeled and diced
  • 2 cloves garlic, minced
  • 2 (15 oz each) cans diced tomatoes, undrained
  • 1 cup  chicken broth
  • 1/4 tsp kosher salt
  • pinch black pepper
  • 1/4 cup half and half
  • 2 Tbsp basil pesto

Instructions

  1. In a large pot, pour in your olive oil and heat over medium heat.
  2. Add the diced onion and cook until softened and slightly browned.
  3. Add in the garlic and cook for a minute or so
  4. Add the tomatoes, broth, salt and pepper. Stir to combine.
  5. Bring everything to a boil and turn head to low.
  6. Use an immersian blender to blend until smooth.
  7. Stir in the half and half and heat through.
  8. Spoon into bowls and add 1 tsp of pesto and half and half to the top of the soup.
  9. Enjoy!
