Slow Cooker Chicken Taco Soup

This is a yummy, warming soup, thanks to the hearty and flavorful combination of chicken, vegetables and seasonings. Let your family or guests pick their toppings-my favorites are avocado, sour cream and tortilla chips!

MAKES 6 TO 8 SERVINGS

  • 3 to 4 chicken breasts
  • 4 cups (946 ml) chicken broth
  • 1 (14.5-oz [411-g]) can diced tomatoes
  • 1 onion, diced
  • 1 tablespoon (8 g) chili powder
  • 1 (15-oz [425-g]) can black beans
  • 2 cups (289 g) corn
  • ¼ cup (4 g) fresh cilantro
  • Toppings (avocado, cheese, sour cream and tortilla chips), for serving

Instructions

Add the chicken, chicken broth, tomatoes, onion and chili powder to the slow cooker.

Cook on low for 6 hours.

Remove the chicken and shred. Put it back in the slow cooker. Add the beans, corn and cilantro.

Cook on high for 30 minutes.

Serve with avocado, cheese, sour cream and tortilla chips.

  • Add the chicken, chicken broth, tomatoes, onion and chili powder to the slow cooker.
  • Cook on low for 6 hours.
  • Remove the chicken and shred. Put it back in the slow cooker. Add the beans, corn and cilantro.
  • Cook on high for 30 minutes.
