21 Day Fix Stuffed Pepper Soup

Delicious Stuffed Pepper Soup that’s 21 Day Fix approved plus it has amazing flavor! So good you won’t even know you’re eating healthy!

I’m going to be completely and utterly honest with you guys. I started this 21 Day Fix diet thing because over the summer while I was writing my book (that’s scheduled to publish on November 14th) I gained a decent amount of weight. Not terrible amounts but enough that my pants were tight and I didn’t want to wear a swimsuit in Cabo las month.

Anyway, I stumbled across this awesome group on Facebook and ended up joining an accountability group where we post our daily meals and workouts. This group was exactly what I needed to give me a kick in the butt and start making a few healthier meals each week and not sit ALL DAY LONG at my computer working at home without taking the time to workout.

I’ve been inspired to try some new recipes that are 21 Day Fix approved and there have been some really good ones! I have adapted them slightly to fit my preferences and this Stuffed Pepper Soup is my favorite recipe so far! It’s really delicious and easy to make too!

How to Make Stuffed Pepper Soup

Recipe Inspired by Cortney Graham.

Ingredients You Need

  • 1 Pound Ground Turkey
  • 3 Bell Peppers, I used red, orange and yellow
  • 2 TBSP Garlic, minced
  • 1 Cup Mushrooms, sliced
  • 1 medium onion, chopped
  • 1 15.4 oz can Tomato Sauce
  • 1 10 oz can diced tomatoes, I used the kind with green chilis
  • 2 Cups Beef Broth
  • 2 TBSP Honey
  • 1 TBSP Worcestershire Sauce
  • 2 TBSP Italian Seasoning
  • 2 Cups Quinoa, cooked
  • Salt & Pepper to taste

Instructions

Step 1 – In a large pan, brown your turkey on medium heat.

Step 2 – Add the peppers, onions, and garlic to the turkey and saute for five minutes.

Step 3 – Stir in the tomato sauce, diced tomatoes (with juice), beef broth, honey Worcestershire sauce salt, and pepper.

Step 4 – Reduce heat to low, cover and simmer for 45 minutes.

Step 5 – Stir in the cooked quinoa and Italian seasoning.

Serves 10, about 2 cups each

 So far it’s been 10 days on 21 Day Fix and I’ve lost three pounds but more importantly 1 inch off my stomach and chest! The Container system paired with the workouts are amazing! I haven’t really been hungry like some diets and the workouts are 30 minutes long so I can easily get them in each day!

    I just made this for dinner last night and it was amazing. Definitely a recipe I will make again. I also did not come up with 10 servings, I had 5 servings that were 2 cups each. When I broke down each ingredient I calculated that a 2 cup serving would be: 1 red (turkey), 1 green (peppers, onions and tomatoes) and 3/4 yellow (a little less then 1/2 cup quinoa). Thanks for sharing!

    Hi Chrissy it seems EVERYONE has posted the same question and there hasn’t been a response. I’m very confused can you clarify the servings to portion size please so we know what to count for our containers (21 day fix girl here!) thanks!!

    I made this recipe last night and it was good. I did have a couple questions though. In the blog portion the recipe calls for mushrooms but in the actual Directions mushrooms are never mentioned. Also in the serving section it says it makes 10, 2 cup servings but I only had enough for 5, 2 cup servings from the recipe.

    I love this soup … I eat it most days for lunch. I am wondering about the servings. I get approx 10 cups of soup and that works out to 10 – 1 cup servings. Wondering if I should be using two cups or one cup for the container measurements?

    Could you please clarify the containers? I just made this soup and there was nowhere near 10 servings of 2 cups each. I followed it , only omitting the mushrooms but adding about 3/4 cup more quoina and I only had 8, one cup servings.

    This soup turned out amazing! That’s a big compliment coming from a picky eater. I used 4 cups of beef broth and 2 cups of water so that I could cook the rice in the soup rather than cooking it separately. I simmered the recipe for 20 mins (with the additional broth and water) and then added 1 cup of uncooked rice and simmered 30 more minutes. I also omitted the honey since I don’t have any on hand. I will re-make this in bulk to stock in my freezer! Thanks for the {healthy} recipe!

    I haven’t eaten this yet, but did make for meal prep. However I did not get 2 cups to make 10 servings. I got more like 1 cup per serving.

    Loved it. IT was a little sweet, a nice kick of heat would be really good in it too. The flavors were good and who knew it’s actually healthy. My picky 5 year old ate it. I added a little cheese. Is 2 cups really a serving for 21day fix? That was a lot of food. Great recipe though thanks!!!
