Red Pepper Hummus
This Red Pepper Hummus is healthy and incredibly easy to make. With a smoked paprika topping, it's smoky, creamy, and just the right amount of zesty - perfect for dipping fresh veggies, spreading on sandwiches, or serving alongside warm pita. Once you try homemade hummus, you'll never want to go back to the store-bought kind again!
Ingredients:
- 1 (15 oz) can chickpeas, drained and rinsed
- 1 large or 2 small red bell peppers
- ⅓ cup tahini
- 2 lemons juiced
- ½ teaspoon garlic powder
- 1 teaspoon ground cumin
- ½-1 teaspoon salt (to taste)
- 5-6 ice cubes
How to Garnish Red Pepper Hummus:
- Drizzle of olive oil
- Sprinkle of smoked paprika
- Chopped parsley
- Crumbled feta or pine nuts for a Mediterranean twist
Instructions:
- Blend the hummus:
In a food processor, combine chickpeas, red pepper, tahini, lemon juice, garlic, olive oil, cumin, ice cubes, and salt. Blend until mostly smooth. - Serve:
Transfer to a bowl, drizzle with olive oil, and sprinkle with smoked paprika and your favorite garnish. Serve with pita, crackers, veggies, or use as a spread.

Storage:
Store in an airtight container in the fridge for up to 5 days. The flavors deepen as it sits, so it's even better the next day!
