These Maple Bar Cookies are the perfect combination of a cookie and everyone's favorite doughnut, a maple bar. Topped with delicious maple icing, you won't be able to stop at just one!
Preheat the oven to 350 degrees and line a baking sheet with parchment paper or a silicone baking mat, and set aside.
Using a stand mixer or hand mixer, cream the butter and sugar on high speed until light and airy. Approximately 2-3 minutes.
Scrape the edges, and add eggs, maple syrup, vanilla extract, and maple extract. Mix on high speed until well combined.
In a medium sized mixing bowl, combine all dry ingredients.
Incorporate the dry ingredients into the wet ingredients, mixing on low speed until combined.
Divide cookie dough into 12 rounded balls, and place at least 1 inch apart on the baking sheet.
Bake cookies for 12-14 minutes, or until the edges are golden.
While the cookies are cooling, begin preparing the icing. Melt the butter, maple syrup, and maple extract in a small saucepan. Once melted, add the powdered sugar and whisk on low heat until the icing is smooth.
Once the cookies are cool, drizzle the icing on top. It will take about 1-2 hours for the icing to harden.
