Maple Bar Cookie

Ingredients
  

Cookie Ingredients

  • 2 ½ cups All Purpose Flour
  • ½ cup Cake Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • 1 cup Light Brown Sugar
  • ½ teaspoon Salt
  • ½ cup Salted Butter
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Maple Extract Or imitation maple
  • ¼ cup Maple Syrup

Icing Ingredients

  • 2 tablespoon Salted Butter
  • ¼ cup Maple Syrup
  • ½ teaspoon Maple Extract
  • 1 cup Powdered Sugar

Instructions
 

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper or a silicone baking mat, and set aside.
  • Using a stand mixer or hand mixer, cream the butter and sugar on high speed until light and airy. Approximately 2-3 minutes.
  • Scrape the edges, and add eggs, maple syrup, vanilla extract, and maple extract. Mix on high speed until well combined.
  • In a medium sized mixing bowl, combine all dry ingredients.
  • Incorporate the dry ingredients into the wet ingredients, mixing on low speed until combined.
  • Divide cookie dough into 12 rounded balls, and place at least 1 inch apart on the baking sheet.
  • Bake cookies for 12-14 minutes, or until the edges are golden.
  • While the cookies are cooling, begin preparing the icing. Melt the butter, maple syrup, and maple extract in a small saucepan. Once melted, add the powdered sugar and whisk on low heat until the icing is smooth.
  • Once the cookies are cool, drizzle the icing on top. It will take about 1-2 hours for the icing to harden.
