Maple Bar Cookie
Have you ever wondered what a maple bar would taste like as a cookie? Well look no further! These cookies are the perfect combination of a cookie and everyone's favorite doughnut, a maple bar. Topped with maple icing, you won't be able to stop at just one!

For these cookies you'll need:
- A stand mixer or a hand mixer
- I love my Kitchen-Aid stand mixer! The Kitchen-Aid hand mixer is also wonderful and works great.
- A baking sheet
- Parchment paper or a silicone baking mat
- This silicone baking mat has saved me rolls of parchment of paper!
Notes:
- I used cake flour, but you can replace it with all-purpose flour if you don't have cake flour.
- King Arthur cake flour is my go-to.

Ingredients
Cookie Ingredients
- 2 ½ cups All Purpose Flour
- ½ cup Cake Flour
- 1 teaspoon Baking Powder
- ½ teaspoon Baking Soda
- 1 cup Light Brown Sugar
- ½ teaspoon Salt
- ½ cup Salted Butter
- 2 Eggs
- 1 teaspoon Vanilla Extract
- 1 teaspoon Maple Extract Or imitation maple
- ¼ cup Maple Syrup
Icing Ingredients
- 2 tablespoon Salted Butter
- ¼ cup Maple Syrup
- ½ teaspoon Maple Extract
- 1 cup Powdered Sugar
Instructions
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper or a silicone baking mat, and set aside.
- Using a stand mixer or hand mixer, cream the butter and sugar on high speed until light and airy. Approximately 2-3 minutes.
- Scrape the edges, and add eggs, maple syrup, vanilla extract, and maple extract. Mix on high speed until well combined.
- In a medium sized mixing bowl, combine all dry ingredients.
- Incorporate the dry ingredients into the wet ingredients, mixing on low speed until combined.
- Divide cookie dough into 12 rounded balls, and place at least 1 inch apart on the baking sheet.
- Bake cookies for 12-14 minutes, or until the edges are golden.
- While the cookies are cooling, begin preparing the icing. Melt the butter, maple syrup, and maple extract in a small saucepan. Once melted, add the powdered sugar and whisk on low heat until the icing is smooth.
- Once the cookies are cool, drizzle the icing on top. It will take about 1-2 hours for the icing to harden.
