Scrambled Egg Bruschetta with Cheese

Ingredients

Pieces
French Bread
sliced

Eggs

Tablespoons
milk
Mozzarella Cheese
sliced
Tomatoes
diced
Red Onion
Diced
Fresh Basil
thinly cut
Red Wine Vinegar
Olive Oil]
Salt
Pepper
Instructions
Step 1 - Slice the French bread in half and coat slightly with olive oil
Step 2 - Broil for a couple minutes or until the bread is browned
Step 3 - Scramble your eggs by first whisking together the eggs and milk then scrambling in a pan
Step 4 - Add a slice of fresh Mozzarella on top of the bread
Step 5 - Place a large scoop of scrambled eggs on top of the cheese
Step 6 - In a small bowl mix the tomatoes, onions, basil, red wine vinegar and olive oil
Step 7 - Add a scoop of the tomato mixture over the eggs. Season with a small amount of salt and pepper. Enjoy!
