Chocolate Caramel Cookies
I am Tammy from Creative K Kids. Now that I’m a momma of five children, I have turned into a mini-version of my own mom, which means that I do a lot of baking at Christmas time! I literally bake at least one different dessert five days a week for the first two weeks of December, freezing all of the desserts every day.
By the time I am done, I have 10-14 different desserts that I bake usually only at Christmas time. I then pull those desserts out of my freezer and fill at least 10-15 tins full for neighbors, friends, and people who have helped us out in some way the previous year. I also take some to both of my parents’ houses!
So December is a sticky, sweet time in our house! One of our favorite desserts is rather easy to prepare but oh-so-yummy! I found this recipe in a Quick Cooking magazine years ago which I have adapted just a little bit. It is a favorite cookie of my children and my mom and grandma.
My children like to help make this cookie as they get to unwrap all the Rolo candies which turn into the caramel center when baked

These cookies are so simple to make as it utilizes a cake mix and Rolo candies. You just mix up the first few ingredients, make a 1″ ball, press a Rolo into the middle of the ball making sure the Rolo is covered with the dough on all sides.
I have to keep my hands wet or spray them with cooking spray to keep the dough from sticking to my hands when I roll the cookies. Then my children take 4 mini-M&M’s and press them on top of the cookies. You could also roll them in Christmas sprinkles.

The cookies bake, and they are wonderful right out of the oven when the caramel middle is still soft and gooey. However, they taste rather delicious when that caramel hardens up too.

I just made these today and they were amazing! I love that they are so little ingredients and perfect for making with small kids. My 4 year old was in charge of unwrapping the rolos and then he was in charge of putting the m&m’s on top of the cookies! We had so much fun and they turned out delish! These look like a great treat for the kids to help with! My son always loves to help in the kitchen,it makes him really excited to eat, which ia good since he has days he hardly eats at all.
