Chocolate Desserts: Fabulous Fudge Bars

Normally I try to focus on healthier recipes, but I also believe in the 80/20 rule. 🙂 And this recipe DEFINITELY falls under the category of sinful!
These bars are...ah-may-zing. Seriously, to die for! There is a little place here in MN, called Cafe Latte, which serves awesome sandwiches and amazing desserts. They also have a little shop called Bread & Chocolate, which serves these Fabulous Fudge Bars. And I made them. And they made my family swoon.
Bread & Chocolate's Fabulous Fudge Bars
Ingredients
- 1 cup (2 sticks) butter
- 2 cups brown sugar
- 2 eggs
- 4 cups old-fashioned oatmeal
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
Filling
- 3 Tablespoons butter
- 1 can (14 ounces) sweetened condensed milk
- 2 cups semi-sweet chocolate
- 1 cup pecans, chopped
- 1 teaspoon vanilla
1. Pre-Heat oven to 350.
2. To make dough: In large bowl, beat butter and brown sugar, scraping bowl as necessary. Beat in eggs.
3. In a separate bowl, combine oatmeal, flour, baking soda and salt. Stir well to combine. Add oat mixture all at once to egg mixture. Mix until combined, scraping bowl.
4. To make fudge filling: In saucepan over low heat, combine butter and condensed milk. Cook over low heat, stirring carefully to avoid scorching, until butter melts. Add chocolate, pecans and vanilla.
5. Remove from heat.
6. To assemble and bake: Press ⅓ of the dough into a 9 X 13 pan. Top with fudge filling. Crumble remaining oat mixture on top. Bake for 15 minutes. Turn pan and bake for 12-15 minutes or until top is slightly golden brown.
