Foil Packets: Cheesy Shrimp and Grits

July 28, 2016   |   4 Comments

Summer means a lot of time outdoors, near the water, and of course the grill! I love putting together new, tasty, and of course simple recipes to toss on the grill.  This recipe works at home in your backyard BBQ or is perfect for something different than hot dogs while camping like this Cheesy Shrimp and Grits grilled foil packets.

I’m so excited to share this recipe with you not only because it’s delicious but it’s really fun to make out camping too!

Foil Packets: Cheesy Shrimp and grits

Most important, you need to the store and grab some shrimp, grits, and the star-Crystal Farms Cheese.  I mean, what recipe every goes wrong when you had cheese?!

Crystal Farms® Cheese is one of the largest cheese brands in the country, based out of Lake Mills, WI. they deliver a quality cheese product that is…rich in calcium, gluten free, with very few preservatives and lactose tolerant. It is a great go to cheese for all my recipes!

How to Make Cheesy Shrimp and Grits

For each packet you will need:

  • ⅓ cup quick cook grits
  • ⅔ cup chicken or vegetable broth
  • 8-10 shrimp, peeled and deveined
  • 2-3 T. Crystal Farms® Cheese
  • 1 tsp. butter
  • ½ tsp. Minced garlic
  • ½ tsp. Ground black pepper
  • ¼ tsp. Coarse sea salt

Foil Packets: Cheesy Shrimp and grits

Directions:

I don’t normally do foil packets with so much liquid on the grill but it is possible. Start by making your packet a double layer of foil to be sure it is strong enough to hold up to the grill.

Place grits, shrimp, Crystal Farms® Cheese, butter, garlic, pepper, and salt in the center of your packet.

Fold in half lengthwise, roll the end over several times and press firmly to seal.

Pour broth (or you can use water) into the foil packet and roll top down to seal well.

Place on hot grill, approximately 400°, then close the lid and cook for about 10 minutes, until most of liquid is absorbed. You can peek to  be sure but close it back up well.

Before serving top with a fresh sprinkling of shredded cheddar cheese.

My kids even gobble up this yummy cheesy dish straight from the grill, and best of all, no dishes to wash after!
