Healthier Coconut Macaroons
These Coconut Macaroons with Chocolate Chips are so easy to make, they only require five ingredients AND they are much healthier because they're sweetened with Maple Syrup! You're going to LOVE these!

How to Make Coconut Macaroons with Chocolate Chips
Inspired by Detoxonista's Recipe
Ingredients You Need
- 2 ½ Cups Shredded Coconut, this will get blended
- 2 Cups Shredded Coconut, this will not get blended
- ¾ Cup Pure Maple Syrup
- 1 Teaspoon Vanilla
- ½ Teaspoon Almond Extract
- ½ Cup Chocolate Chips
- Sea Salt
Instructions
Step 1 - Blend your 2 ½ Cups Coconut in your Ninja Blender until it's the consistency of butter, this took me about 15 minutes of blending
Step 2 - Place all the ingredients except the Sea Salt in a bowl and mix together
Step 3 - Place teaspoon scoops on your cookie sheet that's lined with parchment paper or Silpat
Step 4 - Bake for 20 minutes at 300 degrees, Add a sprinkle of Sea Salt when you remove from the oven! Enjoy!

This recipe made 3 dozen Coconut Macaroons for me! I did find that they also freeze well if you want to put some away to eat later but honestly if your kids get a taste of these delicious snacks, they will be done before you know it!

I know that it's a bit of a stretch to say this is a snack, they might be more of a cookie to be honest. But how many times do you crave something sweet for your afternoon snack time? This is the PERFECT option!

These little cookies are amazing and I LOVE that they are so much healthier than several other cookies that I've made. They're a great option to make as after school treats and even add to my Christmas Cookie trays this year!
