Healthy Recipe: Egg Breakfast Cup

I’ve been making a lot more Breakfast Egg Recipe’s lately, my son loves anything and everything eggs so I’m always trying to find new ways to make them that he will love.

Making an Egg Breakfast cup like these are a healthy breakfast recipe option too, instead of a bowl of cereal or pancakes they’re filling up on protein instead.

My little guy has always loved eggs, I remember spending most of his preschool years having eggs for every lunch.  I tried to make them every different way I could think of because although I love eggs, they did start to get old after a while.  Changing things up and trying new recipes always made it better!

How to make an Egg Breakfast Cup

Ingredients

  • 4 Eggs
  • 4 Slices Deli Ham (mine was a thin slice, I would use a thicker option next time)
  • 2 Green Onions (cut up)
  • 1/2 Cup Shredded Cheese
  • Salt
  • Pepper

Instructions

Step 1 – Grease a muffin pan

Step 2 – Place one piece of ham in the cups

Step 3 – Crack an egg into each piece of ham

Step 4 – Sprinkle with salt and pepper

Step 5 – Bake for 20 minutes at 350 degrees

Step 6 – Use a knife to loosen the egg cup from the muffin tin and then it should pop right out.  Sprinkle shredded cheese and green onions on top of the egg cup.  You could use Salsa and sour cream too if you want a less healthy version.

I used a thin sliced ham to make these and I think when I make them again I will use a thicker cut or even line the muffin cup with bacon, yum bacon!

These would make a great buffet option if you’re having a brunch with friends and family.
