Homemade Peanut Butter Cookies

One of my kids very favorite treats are homemade peanut butter cookies, they have to be soft with a glass of cold milk and my boys go crazy for them.  This peanut butter cookies recipe is one that I’ve had for years, it’s that go to recipe to make when I want the perfect cookies!

I make smaller cookies that are about 1 inch, these fit perfectly in with lunches, snacks, etc.  The recipe makes about 6 dozen cookies, so you have plenty to share with friends and neighbors too!

Homemade Soft Peanut Butter Cookies

How to Make Homemade Peanut Butter Cookies

Ingredients You Need

  • 1 cup  butter, softened to room temperature
  • 1 cup Truvia Baking Blend
  • 3/4 cup packed Truvia Brown Sugar Blend
  • 2 large eggs, room temperature preferred
  • 2 teaspoons Rodelle vanilla extract
  • 1 cup creamy peanut butter
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup granulated sugar, for rolling (optional)

Instructions

Step 1 – In a stand mixer, cream the butter and sugars together on medium speed until it’s smooth.

Step 2 – Add the egg and mix on until well combined

Step 3 – Add the vanilla and peanut butter and mix on high until combined

Step 4 – In a separate bowl, mix the flour, baking soda, baking powder and salt together

Step 5 – Add the flour mixture to the wet ingredients and mix on low until combined

Step 6 – Refrigerate for 4 hours

Step 7- Preheat the oven to 350 degrees and line to baking sheet with a silicone baking mat

Step 8 – Roll the balls (I use a small cookie scoop to make the 1 inch cookies) of dough into granulated sugar and place on the baking sheet

Step 9 – Press a fork into the tops to create the criss-cross pattern.  Bake for 10 minutes or until they are slightly browned on the edges.  Remove from oven and let them cool on the sheet for 5 minutes.  Enjoy!
