Microwave Blueberry Muffins in Mug

Are you ready to send your kids back to school or are you frantically trying to get all the supplies, clothes and all of those million different items they need to go back?  One thing that I always struggle with is making them breakfast in the morning that they will eat as well as fill them with nutrients.

One of their favorite breakfast meals is Blueberry Muffins with a side of scrambled eggs.  Unless I plan ahead and make a batch of blueberry muffins, there’s just not time to make them in the morning before school.

We had a fun idea of making Blueberry Muffins in a Mug by using one of our favorite new mixes, Silver Fern™ Brand  Blueberry Muffins. They’re very easy to make and taste amazing, my boys are thrilled to make these in the morning before heading out the door.

How to Make Blueberry Muffins in a Mug

Mix together all the ingredients on the back of the box.  This Silver Fern Blueberry Muffin mix calls for 1/2 cup Applesauce and 3 eggs.  Grease a coffee mug and ad 1/2 cup of the mixture into the mug.  Microwave on high for 2 minutes, let cool slightly and enjoy!

I added a few more fresh blueberries on the top of mine and my son put a pat of butter and a drizzle of maple syrup.  It was delicious!
